Fruit Salad with Honey Dressing

1 green apple
1 avocado
1/4 cup raisins
1 banana
1 can mandarin oranges
1/4 cup chopped walnuts

Cut apple, banana and avocado and place in bowl with the other ingredients.

Dressing:

1 tsp Lemon juice
1/4 tsp Dijon Mustard
1/3 cup honey
1/4 cup canola oil
1-1/2 tsp. Poppy seeds
1/4 tsp salt
1/4 cup orange juice

Place dressing ingredients in a jar with a lid and shake, then pour over fruit and toss.


Becky's Chicken Salad

2-1/2 cups diced and chilled, cooked chicken
1 cup chopped celery
1 cup sliced, seedless grapes
1/2 cup sliced almonds
2 Tbsp chopped fresh parsley
1 tsp salt
1 cup mayonnaise
1/4 cup heavy whipping cream

In a medium bowl, whip cream to soft peaks. Combine meat, celery, grapes, almonds, parsley, salt and mayonnaise with whipped cream. Chill. Serve on croissants.


Fried Ice Cream

1 box (12 oz.) Cinnamon Toast Crunch Cereal
3/4 stick margarine, melted
1-1/2 gallons vanilla or Fried Ice Cream flavor ice cream

Crush cereal and set aside 1 cup. Add melted margarine to crushed cereal and blend until well coated. Spread mixture in 9 x 13 baking dish and bake at 325 degrees for 10 minutes. Remove from oven and cool. When crust is completely cooled, spread softened ice cream over crust, sprinkle the remaining crushed cereal over the top, and place in the freezer until solid. Serve with honey.
